Meet Carey-Lynn Campioni & Dean Russell
Carey-Lynn Campioni and her husband Dean Russell came from the Vancouver area to Prince George several years ago seeking a more casual and affordable lifestyle. What they found was exactly what they were looking for, plus a community full of friendly people who welcomed them. It wasn’t long before they couldn’t go out without bumping into a familiar face on the streets. “We love that,” says Carey-Lynn. “It’s not like the big city where people don’t have time for each other or even say hi on the streets.”
Carey-Lynn has worked for all of her life in the hospitality industry, while Dean is a Red Seal certified chef. Carey-Lynn went to work in the local hospitality industry before having her second baby. When it was time to go back to work, Carey-Lynn applied for a position at Cimo Mediterranean Grill and got a call-back before she even got back home. She has been the restaurant’s general manager and operator ever since, and Dean, who was working as the executive chef at UNBC, joined her a few years later. For Carey-Lynn, Cimo is like a second home. She treats her staff like extended family and urges them to do the same with the restaurant’s customers. It’s important to her that their guests feel as though they are home and that regulars are greeted by name. Because of this, the restaurant has many regulars, and Carey-Lynn and her employees are able to provide a much more personalized dining experience.
Investing in the future of the hospitality industry is something else that is important to Carey-Lynn and Dean. While attending culinary school, Dean had the opportunity to apprentice under some of Vancouver’s best chefs. Now Dean does the same thing those chefs did for him by working with culinary apprentices from CNC. He has already helped to graduate two student chefs.

Cimo Mediterranean Grill is well known for operating with an environmentally-conscious lifestyle in mind: using “to go” containers made of biodegradable materials, recycling and composting a large majority of its waste into community gardens, which enhances the downtown core and provides nutritional soil for vibrant herbs and fresh produce to grow. This allows Cimo to keep the circle going and continue providing the community with healthy wholesome ingredients in all of its authentic Mediterranean dishes.
