Meet April Ottesen
One of the things that set the small town restaurant apart from big city restaurants is the nature of the relationships formed within the business. Says Sassafras Savouries owner April Ottesen, “my customers become my friends, my suppliers become my friends, my customers support my suppliers. We create a local sustainable food system together.” This intertwining helps to foster mutually-supportive relationships that sustain the community as a whole and help businesses to remain successful so they can continue contributing to the community. It’s also good for life outside of work. “I know my neighbours here,” says April, which lends itself to a sense of safety and feeling of security and trust that makes life rich and full.
April knows that the restaurant business can be tough and competitive. April has always been dedicated to the idea of serving authentic food that is not just full of flavour and prepared with care but which also encourages a sustainable community and system of eating. It is one of the things that has helped keep the restaurant in business for well over a decade. April is proud of her staff, all of whom are also committed to excellent, quality food and serving their customers. Being an entrepreneur has allowed April many opportunities over the years to contribute to the community in various ways, something which she feels privileged to do.
April has an appreciation for nature and is happy that there is such an abundance of it here in Prince George. She enjoys all of the wonderful walking trails along the Nechako and the Fraser rivers which make it easy for anyone to get out and be in nature quickly. April likes to cultivate her own little bit of nature by spending time in her garden during the spring and summer months whenever she has the chance. She also spends a great deal of time with her family.
